Confession time: I am an addict.  I have been making batch after batch of this wonderful fruit salsa with cinnamon/sugar pita chips.  Holy YUM!  So, since that is pretty much the reason as to why I have not been blogging as regularly (among other extremely exciting and busy things to be discussed at a later date) I have decided that I would share this gem of a recipe with you.  I got it from our chef at daycare.  Thank You Julaine!

Pita Chips Ingredients:
Flour Tortillas cut into 1/8 wedges
Sugar Cinnamon mix (I use 1 cup sugar, 1 Tablespoon cinnamon)
Oil (I use about 6 cap fulls of veggie oil for TWO cookie sheets)

Preheat oven to 375 degrees. Place cut tortilla wedges in a single layer on the cookie sheets.  Drizzle the oil over the wedges.  Sprinkle the Cinnamon/Sugar Mixture over the oiled wedges.  Put em in the oven for about 10 minutes (more or less depending on oven).  Don’t burn, they cook quick!

Fruit Salsa:
1 Mango
2 Kiwi
1 Apple
1 Pint Strawberries

Cut fruit into small pieces.  Mix together.  Enjoy!
